Preparation Process – Step by Step Instructions
Step 1
Biltong can be made from beef or game meat, sliced along the grain of the meat. This meat is spiced first so as to give it a lovely taste.
Step 2
The Biltong is then salted; this acts as a preservative.
Step 3
The beef biltong is then cured having taken in all the spices and salt.
Step 4
The biltong is later on dried.
A fully dry biltong turns into about half its original size. The biltong feels much firmer and can bend without cracking. Its colourturns into a rich, deep maroon.
